A smart innovation from Furi, the TechEdge professional knife sharpening system is a high-speed, manual way to restore keen edges to straight-blade kitchen knives. Intended for the busy chef or serious home cook, the system takes knives through three stages--reshaping, coarse honing, and fine honing--in a series of simple steps. The Edge Restorer works first, using two tungsten carbide cutters to restore new angles to a rounded edge. The cutters adjust easily for different cutting edge angles and are much faster and more accurate than a stone. The second phase uses the Diamond Fingers Sharpener, a set of six stainless-steel spring fingers that are bonded with 450-grit crushed industrial diamonds. More exact and consistent than a steel, the fingers automatically set correct cutting angles and create a fine micro-serration that is perfect for most kitchen knives. Extra-fine cutting knives, like those used for filleting and boning, get a final honing from the Tech Hone Fingers, a device similar to the Diamond Fingers but with a coarse striated surface that creates a fine finish. All three sharpening pieces fit snugly into the Tech Edge base, which has a long handle and a wire safety guard to protect fingers and hands.
